Let's groove on the story of Cláudio and Elvia, who took their vibes to Chapada de Minas back in '86. Cláudio, an Agricultural Engineer from UFPR, and his wife Elvia are now joined by their son Éder, an Environmental Engineer from UFV who’s back from Japan. Together, they’re all about producing high-quality coffee, man. Their fermented coffees, spending 10 days in sealed barrels, often rock the top spots in coffee contests. Cláudio sees coffee as a life companion, bringing prosperity and jobs to the family. These cool cats use a method called manual stripping to harvest their coffee. It’s like a hands-on dance, where they strip the beans from the branches and let them fall onto a cloth spread under the plants. After lifting and cleaning, they bag up the cherries for the next stage. The magic really happens during the processing, which is done by anaerobic fermentation. This groovy process takes place in a container without oxygen, where microorganisms feast on the sugars and phenolic compounds from the cherries. This lack of oxygen lets the microorganisms multiply and create exotic flavors in the coffee. The gases emitted are controlled through a valve, keeping the fermentation process just right.
